Why disinfection is more important today than ever before – results of the HAW study 2025
The current study “Analysis of the microbiological condition of ready-to-eat salads in food retail” (HAW Hamburg, 2025) clearly shows the challenges facing the fresh-cut and vegetable industry:
- 30 samples of ready-to-eat salads were examined.
- High total bacterial counts already several days before the best-before date.
- Over 50% of the samples showed abnormal
- Enterobacteriaceae values.
- E. coli was positive in isolated cases.
Listeria & salmonella were not found – but the study expressly warns:
Even small temperature deviations cause listeria to grow rapidly in fresh-cut products.
Key message of the study:
👉 A significant proportion of salads show microbiological abnormalities even before the best-before date is reached.

Process hygiene and product disinfection must be significantly improved if safe products and better shelf life are to be achieved.
